Ron's Grand Marnier Apple Pie




Grand Marnier Apple Pie;

This is one of my favorite recipes:

Crust:
You can take the short cut, but it is better to make it from scratch.

Ingredients:

2 cups all-purpose flour
I teaspoon salt
1 tablespoon sugar
6 tablespoons butter
6 tablespoons shortening
7 to 8 tablespoons ice water (really cold)

Mix dry ingredients and set aside.
Let butter soften. Mix with moist ingredients.
Mix two together. Dough should be completely mixed.

Cover and Refrigerate for 1 hour minimum.
Divide into two balls to roll out and make two round crusts.


Filling:


Pre-heat oven to 400 degrees

5-6 Granny Smith Apples
1/2 Teaspoon of Cinnamon
1/2 Teaspoon of Nutmeg
1/4 cup of Grand Marnier
1/2 cup of Honey (you can substitute 3/4 cup of Brown Sugar if you prefer)
1 Teaspoon of Lemon Juice

Peel and core apples. Mix with ingredients. Arrange apples in pie crust.
Make sure to adequately bind the two pieces of the crust.

Bake for 50 to 60 minutes. Do not over cook or you end up with apple sauce.

You can also give the pie a great finish with a crust wash: 1 egg white, 1 table spoon brown sugar, 1 teaspoon Grand Marnier, and 3 tablespoons water. Mix and 'bathe' crust every twenty minutes.

Take pie out of oven and let 'rest for an hour before serving.
